Recently I came across the recipe by Dr. Stephen Gundry called cranberry orange muffins, they can be vegan and gluten free. If you’re trying to get away from sugar this is a good option. I’ve given up on making just six muffins as the recipe calls for because they go so fast at our house that there’s never any left when I go back for more. So I double the recipe.
They contain healthy coconut flour, sea salt baking soda, coconut oil, just like sugar, eggs, or vegan eggs, some orange zest and Cranberries. Like the coffee cake muffin recipe I shared earlier these are amazing with a cup of coffee or a glass of milk for breakfast. Moist and they can be eaten on the run.
